Ingredients

Main Ingredients

  • 2 cups dried navy beans or 4 cups canned beans, drained and rinsed – These are the classic choice for their creamy texture.
  • 1 medium onion finely diced – Adds a savory base and a hint of sweetness as it cooks.
  • 2 cloves garlic minced – A touch of garlic brings depth to the dish.
  • 4 strips bacon chopped (optional) – For a smoky, meaty flavor; skip or use plant-based alternatives for a vegetarian option.
  • 1/3 cup molasses – The secret to rich caramelized sweetness.
  • 1/4 cup brown sugar – Balances the tangy and smoky elements with a gentle sweetness.
  • 1/4 cup ketchup – Adds a tangy tomato-based flavor.
  • 1 tablespoon mustard yellow or Dijon – Brings a slight tang and sharpness to cut through the sweetness.
  • 1 tablespoon Worcestershire sauce – Enhances the umami and smoky notes.
  • 1 teaspoon smoked paprika – For an extra layer of smokiness.
  • 1 cup water or vegetable stock – Helps create the perfect sauce consistency.

Optional Add-Ins

  • 1 tablespoon apple cider vinegar – Brightens up the dish if you want a tangier flavor.
  • 1 teaspoon hot sauce or cayenne pepper – For those who love a spicy kick.
  • 1/4 cup maple syrup – Swap for brown sugar if you want a more natural sweetness.

Ingredient Notes

  • If using dried beans don’t forget to soak them overnight for the best results.
  • Make it your own: Substitute bacon with smoked tofu or tempeh for a vegetarian-friendly version.
  • Taste as you go: Adjust sweetness tanginess, or smokiness to your liking before baking.

Instructions

Method

  • Now that you have all your ingredients ready, let’s get to the fun part—cooking! This simple, step-by-step method will guide you to perfectly baked beans every time. Whether you’re using dried or canned beans, the process is easy and straightforward.

Step 1: Prepare the Beans

  • If Using Dried Beans: Rinse the beans thoroughly, then soak them overnight in plenty of water. The next day, drain and rinse them again.
  • If Using Canned Beans: Simply drain and rinse the beans under cold water to remove any excess sodium and preservatives.

Step 2: Cook the Bacon (Optional)

  • If you’re adding bacon, heat a large pot over medium heat. Add the chopped bacon and cook until crispy, about 5-7 minutes.
  • Once cooked, remove the bacon and set it aside, leaving a bit of bacon fat in the pot for flavor.

Step 3: Sauté the Onion and Garlic

  • In the same pot, add the diced onion and cook over medium heat for about 5 minutes, or until softened.
  • Add the minced garlic and sauté for another minute, until fragrant.

Step 4: Combine the Ingredients

  • To the onions and garlic, add the molasses, brown sugar, ketchup, mustard, Worcestershire sauce, smoked paprika, and water (or vegetable stock). Stir everything together until well combined.
  • Add the soaked (or canned) beans to the pot along with the crispy bacon (if using). Mix it all together.

Step 5: Simmer and Bake

  • Bring the mixture to a simmer and let it cook uncovered for 10-15 minutes, allowing the flavors to meld together.
  • Preheat your oven to 350°F (175°C).
  • Once simmered, transfer the beans to a baking dish and bake uncovered for 1 to 1.5 hours. Check every 30 minutes to make sure there’s enough liquid, adding a little more water or stock if needed.

Step 6: Serve and Enjoy

  • Once the beans are tender and the sauce has thickened, remove them from the oven. Let them sit for 5-10 minutes to cool slightly and set.
  • Serve hot as a side dish or main course, and enjoy the hearty, comforting goodness!

Cooking Tips

  • For a deeper flavor, bake the beans longer for a caramelized, slightly crispy top.
  • Don’t be afraid to adjust the sweetness or tanginess. If you like your beans on the sweeter side, add a bit more brown sugar or maple syrup.
  • Want a spicier version? Add some chili flakes or hot sauce right before baking for that extra kick.
